No-bake cheesecake cups are a quick dessert that can be prepared with simple ingredients and chilled until firm. The recipe can be served in small jars, cups or ramekins.

Ingredients

Crust:

  • 1 cup crushed graham crackers
  • 3 tablespoons melted butter
  • 1 tablespoon sugar

Filling:

  • 8 ounces cream cheese, softened
  • 1/3 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream

Topping (optional):

  • Fruit, jam, chocolate chips or crushed cookies

Directions

1. Make the crust.

In a bowl, combine graham cracker crumbs, melted butter and sugar. Mix until the crumbs are coated and resemble wet sand. Spoon a layer into the bottom of each cup and press down lightly.

2. Prepare the filling.

In a separate bowl, beat the softened cream cheese and sugar until smooth. Add vanilla extract.

In another bowl, whip the heavy cream until it forms soft peaks, then fold it gently into the cream cheese mixture.

3. Assemble the cups.

Spoon the filling over the crust layer, smoothing the tops.

4. Chill.

Refrigerate for at least 1 to 2 hours, or until firm.

5. Add toppings.

Before serving, add fruit, jam, chocolate pieces or any preferred topping.

The cups can be kept covered in the refrigerator for several days.
