Tomato Basil Soup and Grilled Cheese for Cold Days

When the weather gets cold in Pittsburg, I always crave something warm and simple. Tomato basil soup with grilled cheese is one of those meals that never fails. It’s affordable, easy to make and perfect for a quiet night at home or a quick dinner after a long day on campus. 

Tomato Basil Soup 

Ingredients: 

  • 2 tablespoons olive oil or butter 
  • 1 small onion, chopped 
  • 2 cloves garlic, minced 
  • 1 (28-ounce) can crushed tomatoes 
  • 2 cups chicken or vegetable broth 
  • Salt and pepper to taste 
  • 1 teaspoon dried basil or a handful of fresh basil 
  • ½ cup milk or cream (optional) 

Directions: 

  1. Heat the oil or butter in a pot over medium heat. 
  2. Add the onion and cook until soft. Add the garlic and stir for 30 seconds. 
  3. Add the tomatoes, broth, salt, pepper and basil. 
  4. Bring to a gentle boil, then lower the heat and simmer 15–20 minutes.
  5. Blend until smooth. Stir in milk or cream if using. 

Grilled Cheese 

Ingredients: 

  • 2 slices bread 
  • 2 slices cheese (cheddar, American or mozzarella) 
  • 1 tablespoon butter 

Directions: 

  1. Heat a skillet over medium heat. 
  2. Butter the outside of the bread slices. 
  3. Place cheese between the slices and cook until the bread is golden and the cheese is melted. 

    This is one of those meals that feels comforting without being complicated. Simple, warm and always a good idea on a cold Kansas day.
