Taco Soup

Ingredients

1tbsp olive oil

1lb ground beef

1 large, sweet onion, diced

2 bell peppers, diced

3 cloves garlic, minced

1 jalapeno, seeded and minced

1 28oz can pureed tomatoes

2 cups beef broth

1 14oz can black beans, drained and rinsed

2 cups frozen corn

2 tbsp cilantro, chopped

Homemade taco seasoning, see below

Homemade taco seasoning 

1 ½ tbsp chili powder

1 tbsp cumin

2 tsp paprika 

2 tsp salt

1 tsp black pepper

1 tsp garlic powder

1 tsp coriander

½ tsp oregano 

Instructions

To make the taco seasoning, combine all ingredients for the taco seasoning in a jar or bag and shake until all the seasonings are combined well.

Heat a large pot over medium high heat and add olive oil once hot (you can also use a dutch oven). Add ground beef and sauté until browned. This usually takes 6-7 minutes. Make sure to stir occasionally to break up the meat into smaller pieces. Once the meat is browned, add onions and bell peppers and saute for another 6-7 minutes. 

After the meat and vegetables are cooked and soft, add your garlic, jalapenos, and your homemade taco seasoning. Be sure to stir continuously and cook until the spices are worked into the meat and vegetables, it should start to fill your house with delicious smells. Next, add the beef broth, black beans, corn and pureed tomatoes. Increase the heat to high and bring to a simmer. Once it is simmering, reduce the heat to medium low and allow it to simmer, uncovered, for about 10 minutes. 

Finally, taste your masterpiece and add additional seasoning, salt and pepper to your own personal preference. Stir in fresh cilantro and serve hot! 

To garnish, use your choice of avocado, cheese (shredded cheddar is great but I prefer crumbled queso fresco), sour cream, jalapenos, diced red onions, lime, tortilla chips and anything else you would put in a taco, the possibilities are endless! If you don’t like beef, you can easily substitute it for an equal amount of ground chicken or turkey. If you are vegetarian, skip the meat all together and proceed with the recipe, doubling the black beans or using a combination of black beans and red kidney beans. If you’d like it with more of a kick, use jalapenos and/or keep some of the seeds, or double the amount of chili powder in your homemade taco seasoning. Serve with a side of Mexican cauliflower rice, or homemade cornbread.
