With summer coming to an end and fall slowly approaching, it is about time to get out those sweatshirts and warm blankets. As we say goodbye to what seemed to be an endless summer, we now say hello to all of fall’s beautiful colors and scents. Fall is the perfect time to get out those warm and inviting desserts that grandma always makes on Thanksgiving. For this week’s recipe we’ll be making a rich and scrumptious peach pie that will make you want to be wrapped in falls cool arms forever.
The first thing when baking this delicious homemade pie is to make your homemade pie crust. For this recipe you will need: 1 ¼ cup of flour, ¼ t of salt, ⅓ cup of shortening, and 3 to 4 T of cold water.
First in a mixing bowl stir up the flour and salt. Cut in the shortening until everything shortening pieces are the size of a pea.
Next, slowly add in your cold water and mash simultaneously with a fork. Continue this until the mixture is moist. Next, roll dough into a ball.
After the dough is made, clear off a flat surface and lightly sprinkle with flour. Flatten the dough with your hands on the flour. You should form a circle with your dough about 12 inches in diameter. Next, wrap the pastry around a rolling pin and unroll onto a 9 inch pie plate carefully.
After the crust is in the pie plate, cut off the extra dough about ½ inch beyond the edge of the pie plate and fold under the remaining dough. Then, using a fork make indentions around the edge of the dough to give the pie a little pizazz.
And now onto the good part! First, set your oven temperature to 400. You will next need these ingredients: sugar, cornstarch, cinnamon, fresh or frozen peaches, butter, flour, brown sugar, and oatmeal.
After you have set your oven to 400, get out a large bowl and mix ¾ cup of sugar, 4 T of cornstarch, and ½ T of cinnamon together.
Next, add in 5 cups of peaches (if frozen then the entire bag). Cutting up the peaches into chunks works best but is up to you, you’re the chef!
After all of the ingredients are in the bowl, stir gently with a large spoon until all the ingredients are mixed. Then set aside.
For the crumble topping get out a smaller bowl and add in ½ cup of sugar, ¼ cup of flour, ½ cup of oatmeal, ½ T of cinnamon, and ½ cup of brown sugar. Next cut in ⅓ cup of butter. The butter will cut in best if frozen first.
Now it is time to get your hands a bit dirty! Mix with your hands the contents of the bowl until all the butter is mashed in and you are left with a thick crumbly paste.
Next, evenly scoop the peach mix into your homemade pie crust. Make sure you get all of the juices and sugar at the bottom of the bowl in the pie too. Now, grab the crumble topping and sprinkle over the pie until you can no longer see any peaches.
Bake at 400 for 45-50 minutes, then take out and let cool.
Once the pie has cooled it is time to serve your delicious and fresh peach pie! Served best with a scoop of vanilla ice-cream and a cold glass of milk.
Enjoy!
