½ cup cooked basmati rice (cooked in 1 cup of water with sprinkle of salt and tsp. sunflower cooking oil for about 15 minutes)
1/2 cup cooked small elbow pasta (cooked in 1 1/2 cup water with sprinkle of salt and tsp. sunflower cooking oil for about 15 minutes)
1/2 cup cooked brown lentils (cooked in 1 1/2 cup water with sprinkle of salt and tsp. sunflower cooking oil for about 15 minutes)
1 canned chickpeas, washed, and socked in hot water with dash of salt for 10 minutes
2 tbsp. sunflower cooking oil
1 onion, blinded
dash salt and black pepper
1 tsp. coriander powder
1 can tomato paste
2 tbsp. white vegetable vinegar
1 big onion, sliced into thin pieces and dipped in all-purpose flour with dash of salt
1 cup sunflower cooking oil
For the Koshary: drain and mix all the ingredients (rice, elbow pasta, brown lentil, chickpeas) in this part together in a pan and keep it on a lower heat.
For the Tomato Sauce: roast the blinded onion in a 2 tbsp. of sunflower cooking oil in a pan. Add the canned tomato sauce and mix it well with the roasted onion. Add a dash of salt, black pepper, and coriander powder to the mix and mix it well. Add the 2 tbsp. of white vegetable vinegar to the mix and let it cook for 5 minutes on a low heat.
Heat a 1 cup of sunflower cooking oil in a pan and fry the onion slices until it turns to dark golden-brown color and drain them on a paper towel.
Serving the Koshary:
In a medium size bowl, serve the mix of Koshary (rice, elbow pasta, lentil, and chickpeas) and top it with a thick layer of the unique tomato sauce and sprinkle it with a good amount of fried onion and enjoy!
This recipe is enough for one person. For more than one person you may double the amount of each ingredient.
